Túrós Rétes | Cheese Strudel

Túrós Rétes | Cheese Strudel is a Hungarian food recipe with raisins.
  • 6 phyllo sheets, thawed
  • 6 tbsp. unsalted butter, melted
  • 6 tbsp. powdered sugar, plus extra for sprinkling
  • ¼ c. raisins
  • ½ c. warm water
  • 1 egg, separated
  • 4 tbsp. sugar
  • 2 c. small-curd cottage cheese
  • 8 oz. cream cheese, softened
  • 1 tsp. grated lemon peel
  • 4 tbsp. farina cereal
  1. Preheat oven to 350°F. Butter a 9 by 13-inch pan.
  2. In a bowl, soak raisins in warm water for 10 minutes. Drain well. Mix egg yolk with sugar until smooth. Add cottage cheese, cream cheese, raisins, lemon peel, and 2 tbsp. farina and mix well.
  3. In a small bowl, beat egg white with a mixer or fork until it forms peaks. Fold into cottage cheese mixture.
  4. Before spreading filling on phyllo, sprinkle bottom third of sheets with 1 tbsp. farina.
  5. Place a slightly damp, clean kitchen towel (not terry cloth) on a working surface.
  6. Place 1 phyllo sheet on towel. Use a pastry brush to brush with melted butter. Sprinkle with powdered sugar. Put the next sheet on top. Repeat brushing and sprinkling. Repeat with third sheet.
  7. Place half of the filling on the bottom third of the top sheet, leaving about 1 inch on each side. Fold in the two sides and, starting at the bottom, carefully roll up the sheets. If the phyllo begins to stick, hold the bottom corners of the towel and lift to loosen the sheets.
  8. Place roll seam-side down in buttered pan, and brush with melted butter. Make a second roll with remaining filling and add to pan.
  9. Bake for 30 minutes, or until golden brown.
  10. When strudel is cool, cut into 1-inch slices, place on dessert plates, and sprinkle with powdered sugar.
