Sour Green Bean Soup | Bors de Fasole Verde
Bors de Fasole Verde is a Romanian food recipe for sour green bean soup.
  • 1 tbsp butter
  • 1 onion, chopped fine
  • 1 carrot, peeled and chopped fine
  • 1 parsley root, chopped
  • 1 tsp flour
  • 2 quarts water
  • 10 oz green beans, chopped
  • 1 lb tomatoes, skinned and chopped
  • salt to taste
  • 1⁄4 cup mixed parsley and dill, chopped fine
  • 1⁄2 cup sour cream
  1. Heat butter in a heavy pot. Saute onion until golden then add root vegetables.
  2. Sprinkle with flour and mix thoroughly.
  3. Slowly add water, while stirring, and the beans.
  4. Simmer on lowest heat until the beans are tender, about 30–40 minutes.
  5. Add tomatoes and simmer for 10 minutes. Season with salt.
  6. Add parsley and dill.
  7. Serve with a scoop of sour cream in each bowl.
