Pork Loin Roast

Pork Loin Roast

  • • 2-4 pound pork loin
  • • ½ medium sized onion, diced
  • • ⅓ cup mushrooms, diced
  • • ¼ tsp salt
  • • ¼ pepper
  • • 2 cups day old bread, diced
  • • 1 cup chicken broth
  • • ½ cup dried apricots
  • • ¼ tsp coriander
  • • ¼ tsp pepper
  • • ¼ tsp nutmeg
  • • ¼ tsp salt
  • • ¼ tsp garlic
  • • ¼ tsp chili pepper, minced
  1. Cut along the middle of length of the pork loin ¾ of the way through, fold open the loin and dry it.
  2. In a bowl combine the diced onion, diced mushrooms, salt, pepper, day old diced bread and chicken broth.
  3. When completely mixed place on evenly on the open bottom of the pork loin. Place the dried apricots on top of the filling evenly.
  4. Close the loin and tie with together with string in several places.
  5. Place loin in baking pan with the fatty side up.
  6. In a bowl combine the coriander, pepper, nutmeg, salt, garlic and chili, mix well and place half evenly over the top of the loin.
  7. Cook the loin in middle of the oven at 350F for 2 hours or until well done.
  8. After the loin has cooked for about ½ place the remaining herbal mix on the top of the loin.
  9. Remove from the oven let rest for 5 minutes, and remove string.
