Recipe type: Dessert
Pepparkakor is a Swedish food recipe for ginger snaps.
  • 1⁄2 cup brown sugar
  • 1 cup boiling water
  • 11⁄4 cups sugar
  • 1 tbsp dry ground ginger
  • 1 tbsp cinnamon
  • 1 tsp cloves, ground
  • 1 tsp cardamom
  • 1 1⁄2 cups butter, softened
  • 2 tsp baking soda
  • 4 cups flour
  • 3⁄4 cup whipping cream
  1. Make syrup by mixing brown sugar and boiling water.
  2. In a mixer, blend thoroughly the syrup, sugar, spices, and butter then let cool slightly.
  3. Dissolve baking soda in 1 tablespoon water and blend together with half the flour. Blend in syrup mixture.
  4. Whip cream to soft peaks and gradually blend into batter, a little at a time.
  5. Cover dough; let rest overnight refrigerated.
  6. Stir in remaining flour to make a firm dough.
  7. Knead on a floured surface; roll out to 1⁄8 inch and cut out using desired cookie shapes.
  8. Place well apart on a greased and floured cookie sheet.
  9. Bake in a preheated 350F oven just until slightly golden, for about 5–6 minutes.
  10. Loosen cookies immediately upon removing from the oven; let cool completely on cookie sheet.
