Mahi Sefeed
Recipe type: Entree
Mahi Sefeed is an Iranian food recipe of stuffed fish.
  • 1 cup dried tamarind paste
  • 1 cup warm water
  • 4 tbsp oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced into strips
  • 2 red chili peppers, left whole
  • 2 cups fresh parsley, minced
  • 1⁄2 cup cilantro, chopped
  • salt and pepper to taste
  • 1 whole fish (about 2 lbs), gutted and cleaned, head and tail left on
  1. Place the tamarind paste in a bowl. Pour warm water over and rub paste with your fingers to separate the seeds from the pulp. Discard seeds and sieve the pulp, pressing to extract all the juices. Set aside.
  2. Heat 2 tablespoons oil in a frying pan. Stir-fry the onion, garlic, and bell and chili peppers.
  3. Add parsley and cilantro. Season with salt and pepper. Fry for a few more minutes. Remove from heat and set aside.
  4. Heat oven to 350F. Place the fish in a ceramic baking dish.
  5. Mix a third of the tamarind puree with the vegetable mixture, and stuff into the fish cavity.
  6. Season the remaining tamarind sauce with salt and pepper, mix with remaining 2 tablespoons oil, and pour over the fish.
  7. Cover the dish with aluminum foil and bake for 1⁄2 hour. Remove foil to let the fish brown.
  8. Bake for another 1⁄2 hour or less, just until fish is nicely browned and flakes easily. Serve with rice.
