Gingered Salmon
Recipe type: Entree
Gingered Salmon is a Norwegian food recipe baked with a honey-butter sauce.
  • 1 salmon filet (3½–4 lb.)
  • 3 Tbs. soy sauce
  • 2 Tbs. freshly squeezed lemon juice
  • 1 Tbs. peeled and grated ginger root
  • ½ tsp. brown sugar
  • ½ tsp. Dijon mustard
  • 8 Tbs. unsalted butter
  • 1 Tbs. honey
  • 3 Tbs. balsamic vinegar
  • 1 Tbs. Dijon mustard
  1. Preheat oven to 250°F.
  2. In a small bowl, mix soy sauce, lemon juice, ginger root, brown sugar and mustard. Place salmon skin side down on a cutting board and pat evenly with soy mixture. Brush a large baking dish with olive oil. Cut salmon crosswise into serving-size pieces and arrange in the baking dish.
  3. Lower oven to 225°F. Cover dish with foil and bake for about 20 minutes. Salmon will be medium rare.
  4. While fish is baking, simmer butter in a saucepan over medium heat until deep golden brown, about 8 minutes, swirling pan occasionally. (Do not burn the butter.) Remove from heat. Whisk in vinegar, honey and mustard. Season with salt and pepper if desired. (Do not overheat the sauce or it will separate.)
  5. Serve the fish with sauce on the side.
