Ghormeh Sabzi
Recipe type: Entree
Ghormeh Sabzi is an Iranian food recipe of vegetable and meat stew.
  • 1 bunch fresh spinach
  • ½ bunch fresh dill
  • 1 bunch fresh parsley
  • 1 bunch fresh cilantro
  • 1 fresh leek
  • 1 bunch fresh chives
  • 1 bunch scallions
  • 1 lb stew meat, cubed
  • 4 lemons dried
  • 1 onion, chopped.
  • ½ tsp turmeric
  • 3 tbsp oil
  • 1 tbsp lemon juice
  • 1 can beans
  • pinch of salt and pepper
  • red peppers
  1. Finely chop the vegetables and cook them in a pot stirring frequently until moisture is evaporated. Add cooking oil and saute the vegetables. Take the pot off the heat and put it aside.
  2. In another pot saute onions. Add the meat, stir fry for a few minutes, add salt, pepper and turmeric and let the meat fry with the onions for a few minutes.
  3. Poke a hole in each of the dried lemons and add them to the mixture. Add about two cups of water, place the lid on the pot and let it boil for another 15 minutes.
  4. Add the fried vegetables into the mixture and turn the heat to medium-low and let it cook about 1 hour. Add the beans half way through.
  5. Serve over white rice.
