Coronation Chicken
Recipe type: Entree
Coronation Chicken is a British food recipe of chicken salad.
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 tbsp curry powder
  • 1⁄4 cup chicken stock
  • 1 tsp tomato paste
  • juice of 1⁄2 lemon
  • 3 tbsp sweet mango chutney or apricot jam
  • 1 cup mayonnaise
  • 3 tbsp yogurt
  • salt, pepper to taste
  • 2 lbs chicken, deboned, cooked and cubed
  1. Heat oil in a saucepan over medium heat and saute onion to soften for 5 minutes.
  2. Stir in curry powder and saute for 2–3 minutes.
  3. Stir in stock, tomato paste, lemon juice, and chutney. Reduce heat and simmer for 5 minutes. Remove from heat; strain and let cool.
  4. Mix mayonnaise and yogurt and add to curry sauce. Mix curry and mayonnaise mixture with the chicken pieces.
  5. Adjust seasoning and chill for at least 1 hour before serving.
