Yemarina Yewotet Dabo
Recipe type: Bread
Yemarina Yewotet Dabo is an Ethiopian food recipe of honey yeast bread.
  • 1 package dry yeast
  • 1⁄4 cup lukewarm water
  • 1⁄8 tsp sugar
  • 1 egg, beaten
  • 1⁄3 cup honey
  • 1 tbsp coriander
  • 1⁄2 tsp cinnamon
  • 1⁄4 tsp cloves
  • 1 tsp salt
  • 1 cup lukewarm milk
  • 6 tbsp unsalted butter, melted
  • 4 cups flour
  1. Sprinkle yeast over warm water and sugar. Let it stand for 3 minutes, then stir to dissolve. Set the bowl in a warm place for about 5 minutes.
  2. In a food processor bowl, combine egg, honey, coriander, cinnamon, cloves, and salt, mixing until smooth.
  3. Blend in the yeast mixture, milk, and 5 tablespoons of the melted butter.
  4. Add the flour and process until the mixture forms a dough.
  5. Remove dough and knead on a lightly floured surface for 10 minutes, or until smooth and elastic.
  6. Place dough in a large greased bowl. Cover with a damp kitchen towel and let sit in warm place for about 11⁄2 hours.
  7. Grease a cookie sheet with the remaining butter.
  8. Punch down the dough and knead it again for a few minutes. Shape the dough into a round loaf, and place on the baking sheet.
  9. Preheat oven to 325F.
  10. Let the bread rise until doubled in size.
  11. Bake the bread for 1 hour, or until the top is crusty and golden.
