Vinho d'alhos | Marinated Pork
Recipe type: Entree
Vinho d'alhos | Marinated Pork is a Portuguese food recipe roasted and basted with the marinade.
  • 4 pounds pork loin roast
  • 1 cup wine vinegar or as needed
  • 4 cloves garlic, peeled, smashed
  • ½ teaspoon ground cumin or to taste
  • ½ teaspoon Jamaican allspice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon chili pepper paste or chili substitute to taste
  • 1 tablespoon coarse salt or to taste
  • 1 teaspoon ground black or white pepper
  1. Place the roast in a ceramic or glass bowl. Mix the vinegar with the remaining ingredients and pour over the roast adding additional wine vinegar as needed to cover the meat. Cover tightly and marinate overnight or 3 to 4 days in the refrigerator.
  2. Preheat the oven to 350F. Reserve the marinade and place the pork in a roasting pan and cook for about two hours. Baste periodically with the marinade.
