Vatapa de Galinha
Recipe type: Entree
Vatapa de Galinha is a Brazilian food recipe with chicken in a creamy nut sauce.
  • 4 chicken pieces (quarters or legs)
  • 3 cloves garlic, minced
  • juice of two limes
  • 1 tsp salt
  • 1 cup chicken stock or water
  • 1⁄2 cup dried shrimp
  • 1⁄2 cup almonds or cashews, chopped
  • 2 cans coconut milk
  • 1 cup fresh, white bread crumbs
  • 6 tbsp olive oil
  • 2 onions, chopped (separated into 2 portions)
  • 1 bunch spring onions, chopped (separated into 2 portions)
  • 3 tomatoes, peeled, seeded, and chopped
  • 2 fresh red chilies (wash and use whole)
  • 2 tbsp tomato paste
  • 4 tbsp fresh cilantro
  • 4 tbsp fresh parsley, chopped
  1. Marinade the chicken with garlic, lime juice, and salt. Set aside.
  2. In a blender or food processor, process the chicken stock, shrimp, nuts, 1 can coconut milk, and bread crumbs until smooth. Set aside.
  3. In a stewing pan, heat 3 tablespoons olive oil. Stir-fry one portion of the onion and spring onions until soft, for about 10 minutes.
  4. Add tomatoes and chilies, stirring for 5 minutes.
  5. Add chicken, tomato paste, chicken stock or water and simmer for 30–35 minutes until chicken is tender.
  6. Transfer chicken to a dish and let cool. Skin and debone chicken, chop meat coarsely and set aside.
  7. Sieve chicken broth and set aside.
  8. In a saucepan over medium heat, heat remaining olive oil to stir-fry remaining onions until soft.
  9. Stir in processed mixture and broth from cooking the chicken.
  10. Simmer uncovered for 15 minutes, stirring frequently until thick.
  11. Stir in the remaining coconut milk and the chopped chicken. Simmer until heated through.
  12. Garnish with the herbs.
