Tortilla Soup
Recipe type: Soup
Tortilla Soup is a crock pot recipe with vegetables and chips.
  • 1 onion chopped
  • 2 cloves minced garlic
  • 2 ribs chopped celery
  • ¼ to ½ cup chopped bell pepper
  • 1 thinly sliced zucchini
  • 1 thinly sliced yellow squash
  • 1 16oz bag frozen corn
  • 2 cans chicken broth
  • 1 can diced tomatoes
  • 1 small can tomato sauce
  • ½ cup chopped cilantro
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • shredded cheese (Monterey jack or cheddar)
  • tortilla chips
  1. Sauté first four ingredients by tossing in a little butter or olive oil.
  2. Put everything else into the crock pot (except the cheese and chips) and cook on low about 6
  3. hours.
  4. Sprinkle with cheese and serve with chips.
