Tah Chin
Recipe type: Entree
Tah Chin is an Iranian food recipe of rice and lamb.
  • 2 lbs lean lamb
  • 2½ cup yogurt
  • 2 tsp salt
  • black pepper, to taste
  • 1 tsp turmeric
  • 3 cup basmati rice
  • 8 cup water
  • 1 tbsp salt
  • 2 egg yolks
  • ¼ cup butter, melted
  • 1 tbsp hot water
  1. Cut lamb into cubes and combine in a bowl with 2 cups of yogurt, 2 teaspoons salt, a good grinding of black pepper and the turmeric. Cover and marinate in refrigerator for 6 hours or overnight.
  2. Wash rice well until water runs clear. Boil water, add 1 tbsp salt and rice, stir and return to the boil. Leave uncovered and boil for 5 minutes. Drain in large sieve.
  3. Beat egg yolks in a bowl, stir in ½ cup yogurt and 1½ cups of the rice. Place melted butter and hot water in a 10 cup casserole. Mix to coat sides. Spread egg, yogurt and rice mixture evenly over base.
  4. Arrange half the lamb cubes over this with some of the yogurt marinade. Add a layer of rice, remaining lamb mixture, and all but ½ cup of marinade. Top with remaining rice and spread reserved yogurt marinade on top.
  5. Cover casserole with lid and cook in a moderate oven for 1½ hours.
  6. Spoon rice and lamb mixture into center of serving dish.
