Tabbouleh
Recipe type: Salad
 
Tabbouleh is an Israeli food recipe of bulgur salad.
Ingredients
  • 2 cups bulgur
  • 1 onion, finely chopped
  • 4 large tomatoes, chopped
  • 2 bunches scallions, finely chopped
  • 2 small cucumbers, peeled and chopped
  • ½ cup olive oil
  • juice of 2 lemons
  • 1 tsp salt
  • ¼ tsp pepper
  • 6 tbsp chopped fresh parsley
  • 3 tbsp chopped fresh mint
Instructions
  1. In a medium saucepan, bring 2 cups of water to a boil. Remove from heat, add bulgur, and cover for 20 minutes.
  2. In a large mixing bowl, combine bulgur with all remaining ingredients.
  3. Place mixture in a large serving bowl and chill several hours before serving.
