Sursild
Recipe type: Entree
 
Sursild is a Norwegian food recipe of pickled herring served for Christmas breakfast.
Ingredients
  • 4 whole salted herrings
  • 3 large onions, sliced into thin rings
  • 1 tbsp peppercorns
  • 1 tbsp mustard seeds
  • 8 cloves
  • 5 allspice berries
  • 1 bay leaf
  • 1 cup 7% vinegar
  • 1 1⁄2 cups sugar
  • 2 cups cold water
  • bread
Instructions
  1. Soak the herrings in water for 1–2 hours, rinse, fillet, pat dry, and cut in 1⁄2-inch strips.
  2. In a covered nonreactive container, mix the onions and spices with the herring.
  3. Mix the vinegar, sugar, and cold water, and stir until the sugar has dissolved.
  4. Cover the herring with the vinegar marinade and leave for at least 1 day.
  5. Serve with the onion rings, over bread to make open sandwiches.

    Thank you ! I am Australian but my mother used to make this. I LOVE IT ! but it’s difficult to find,so I’m going to try to make it myself. I prefer to eat it with hard-boiled eggs on bread. Best wishes, Rolf
