Strawberry Rechel

Strawberry Rechel is an Armenian food recipe for strawberry preserves.
Ingredients
  • 2 quarts strawberries
  • 6 cups sugar
  • 2 tbsp lemon juice
Instructions
  1. Stem and wash strawberries carefully. Scald them in boiling water for 2 minutes, then drain.
  2. Add 4 cups of sugar and boil 2 minutes until it starts bubbling. Remove from fire and when bubbling has stopped add 2 more cups of sugar and boil 5 minutes more.
  3. Then add 2 tablespoons of lemon juice, pour into a shallow pan and let stand overnight.
  4. Put into jars the next day.
