Recipe type: Dessert
Speculaas is a Dutch food recipe of thin and crunchy, spiced cookies with almonds.
  • 4 cups flour
  • 2 cups butter
  • 11⁄2 cups brown sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1⁄4 tsp cloves
  • 1⁄4 tsp nutmeg
  • 1⁄4 tsp ginger
  • 1⁄4 tsp black pepper
  • about 1⁄4 cup milk
  • 1⁄2 cup blanched slivered almonds
  • 1⁄2 cup candied fruit peel
  • butter for greasing
  1. Preheat oven to 350F.
  2. In a mixer or food processor, mix together the first 10 ingredients (all except the milk, almonds, and fruit peel).
  3. Add only enough milk to the mixture to make a stiff dough. Place in a plastic food bag and refrigerate for 1 hour.
  4. Divide dough into two portions. Shape the rolls into cylinders about 12 inches long and 2 inches in diameter. Place in food bags and refrigerate for 1 hour.
  5. On a lightly floured surface, slice the dough cylinders into rounds 1⁄4-inch thick.
  6. Press the almonds and candied peel on top in decorative patterns.
  7. Place on buttered cookie sheets. Bake for 15 minutes, or until light golden.
