Sea Mussel Soup
Recipe type: Soup
Sea Mussel Soup is a Norwegian food recipe in a creamy broth with garlic and shallots.
  • 3 lbs. fresh sea mussels
  • 4 Tbs butter
  • 3 shallots
  • 3 Cloves Garlic, finely chopped
  • ½ cup White Wine
  • 1½ cup heavy cream
  • 1 pinch crushed saffron
  • ½ teaspoon curry
  • Fresh herbs (finely chopped)
  • Kosher Salt and pepper to taste
  1. Wash the mussels well in cold water.
  2. In a pan, fry finely chopped shallots, crushed garlic, herbs and spices in butter. Add the mussels and white wine.
  3. Let it steam under a lid for 4-5 minutes until all mussels are open.
  4. Add the cream and let cook for 3-4 minutes without the lid.
  5. Season with salt and pepper.
  6. Serve the soup with the mussels in shells and some bread and butter.
