Pork Tenderloin with Pineapple
Recipe type: Entree
Pork Tenderloin with Pineapple is a Portuguese food recipe marinated and grilled.
  • 2 pork tenderloins, cleaned
  • 8 oz churrasco sauce
  • 3 c Spanish rice, cooked
  • 1 pineapple, fresh, cored, skinned, chopped, grilled
  • 2 red onions, chopped, sauteed
  • ¾ c sour cream
  1. Slice tenderloins horizontally 1-in thick and pound between waxed paper to ¼-in thick. Cut into strips.
  2. Pour churrasco sauce over pork and turn and coat evenly. Chill for two hours and scrape off excess marinade.
  3. On char-broiler, grill pork 3 to 4 minutes on each side. Heat rice. On a hot, 9-in plate, add rice and stack pork. Garnish with pineapple, peppers and sour cream.
