Pilav is an Iranian food recipe of rice pilaf.
Ingredients
  • 2 tbsp butter
  • 4 tbsp butter, melted
  • 1 cup rice
  • 2 cup chicken stock
  • ½ tsp salt
  • ¼ tsp black pepper
Instructions
  1. In a heavy saucepan, melt 2 tbsp butter, add the rice and stir for 2 or 3 minutes until all the grains are evenly coated.
  2. Do not let the rice brown. Pour in the stock, add the salt and pepper and bring to a boil, stirring constantly. Cover the pan and reduce the heat to low. Simmer for 20 minutes, or until all the liquid has been absorbed and the rice is tender.
  3. Pour in 4 tbsp of melted butter and toss the rice with a fork until the grains glisten. Drape a towel over the rice and let it stand at room temperature for about 20 minutes before serving.
