Pilaf
Recipe type: Entree
 
This Pilaf is an Armenian food recipe with rice and vermicelli.
Ingredients
  • 1⁄3 cup butter
  • 1⁄2 cup vermicelli noodles
  • 1 cup rice
  • 3 cups chicken broth
  • salt and pepper to taste
  • 2 tbsp butter
  • 1 tbsp slivered almonds and pine nuts
Instructions
  1. Heat butter in a heavy skillet over low heat. Brown vermicelli until golden. Stir in rice until well coated with butter.
  2. Add broth and seasoning and bring to a boil. Stir once and then simmer for 15–20 minutes until broth is absorbed and rice is soft.
  3. Let rice sit for about 20 minutes before serving.
  4. Meanwhile, heat butter in a separate pan and brown nuts for about 30 seconds, stirring constantly. Scatter over rice before serving.

    My mother, who died when I was 15, made this often. It was my favorite thing that she’d make. I loved it. When she passed, all her belongings and wonderful recipes were taken away. Now 32, I can’t tell you how wonderful it is to have finally found a recipe for her rice. I never knew it as Armenian rice, and never found a recipe that could compare to hers. Thank you so much for posting this authentic recipe. Changed my life.
