Pasta de Ají Amarillo | Ají Amarillo Paste
Recipe type: Sauce
Pasta de Ají Amarillo | Ají Amarillo Paste is a Peruvian food recipe for sauce made from yellow chilies with sugar and vinegar.
  • 1 lb Ají amarillo
  • ½ cup Sugar
  • ¼ cup Vinegar
  • 2 tbsp Vegetable oil
  1. Wash, stem and seed the ají.
  2. Place in a large pot of cold water and bring to a boil. Reduce the heat and simmer for 30-40 minutes until the ají are soft.
  3. Strain the ají and place in a blender or food processor. Add the remaining ingredients and blend to form a creamy paste. Press through a fine mesh sieve to remove any pieces of skin.
