Recipe type: Soup
Nässelsoppa, traditional Swedish food, is a recipe of creamy nettle soup.
  • 2 liters nettle leaves
  • 1½ liters water
  • 2 tbsp butter
  • 3 tbsp flour
  • 2 tbsp chives
  • 2 beef or chicken bouillon cubes
  • salt and pepper to taste
  1. Simmer the nettle leaves 10 minutes. Strain and set the liquid aside.
  2. Puree the nettle and the chives in a food processor. The result should be a creamy paste.
  3. Melt the butter in a deep pan, add the flour and mix thoroughly on medium heat.
  4. Add the nettle water and cubes while stirring, then add the nettle puree. Let simmer for a few minutes, then add salt and pepper for taste.
