Meldalsodd
Recipe type: Entree
 
Meldalsodd is a Norwegian food recipe of boiled meat served with potatoes and meatball soup.
Ingredients
  • 2 lbs mixed meat, cubed
  • 3 pints water
  • 2 tsp salt
  • 1 tsp peppercorns
  • 1-inch piece fresh ginger root
  • 1 tsp onion, chopped
  • 2 cups carrots, peeled and finely chopped
  • 2 cups turnips, peeled and diced
  • 2 cups cabbage, diced
  • 1⁄2 lb ground meat seasoned
  • boiled potatoes
Instructions
  1. Simmer the meat in water, salt, peppercorns, and ginger until tender (60–90 minutes).
  2. Remove meat and arrange on a serving dish. Strain stock and return to pot.
  3. Add vegetables to stock and simmer until tender.
  4. Meantime, form the ground meat into marble-sized balls and simmer in the stock with the vegetables for about 5 minutes.
  5. Pour some of the cooking liquid over the meat. Serve with boiled potatoes and flat bread, accompanied by the soup and meatballs.
