Mecseki Betyárgombócleves

Mecseki Betyárgombócleves is a Hungarian food recipe of dumpling soup.
Ingredients
  • 3 tbsp oil
  • 2 cups onions, chopped
  • 1 carrot, chopped
  • 1 cup parsley, finely chopped
  • 1 cup celery, chopped
  • 1 tbsp flour
  • 1 tsp fresh thyme
  • 1 quart chicken stock
  • salt and pepper to taste
  • 4 medium potatoes, boiled, peeled, and mashed
  • 2 tbsp lard
  • 2 tbsp flour
  • 1 large egg
  • 1⁄2 cup browned chopped onion, reserved from soup
  • 1 cup ground beef
  • salt and pepper to taste
  • 1⁄4 cup sour cream
  • 1 egg yolk, beaten
Instructions
  1. Heat lard over medium heat in a heavy saucepan. Saute onions until golden. Reserve half a cup for stuffing the dumplings. Stir in carrot, parsley, and celery, and cook until softened. Sprinkle with flour then add thyme and stock. Season to taste, and simmer for 1 hour.
  2. For the dumplings, prepare dough by mixing in a food processor the mashed potatoes, 1 tbsp lard, flour, egg, and salt. Divide into eight portions, and roll out to 1⁄2-inch disks on a lightly floured surface. Cover with a cloth or towel to keep moist while preparing filling.
  3. Melt remaining 1 tbsp lard in a frying pan. Add meat and fry until browned, about 5 minutes. Stir in reserved fried onions from soup mix. Season and mix thoroughly.
  4. To stuff dumplings, place 1 tbsp of filling in the center of each disk. Fold over and shape into half-moons, pressing edges to seal with a fork. Slip dumplings gently into the simmering soup. Cook for 20 to 30 minutes, or until the filling is done.
  5. Just before serving, in a small bowl, blend sour cream and egg yolk, gradually blend in a cup of hot soup. Stir sour cream mixture into soup and turn off heat.
  6. Serve 2 dumplings per person in a large soup bowl, and ladle soup and vegetables over.

    I grew up on a lot of these receipes. the cottage cheese and noodles and the potcheese cake with raisens. not sure if they have it in this book, but it is sooooo good.
