Marak Perot
Recipe type: Dessert
Marak Perot is an Israeli food recipe of fruit soup.
  • 1 cup sour cherries, pitted, halved
  • 1 cup peaches, peeled, pitted, and sliced
  • 1 cup plums, peeled, pitted, and cubed
  • 1 cup apples, grated
  • 1 cup sugar
  • 6 cups water
  • 1 tsp lemon juice
  • 1 cinnamon stick
  • 4 whole cloves
  • 1⁄4 tsp salt
  • 11⁄2 tbsp cornstarch mixed in 3 tbsp water
  • 1 cup sour cream
  • fresh sweet cherries, pitted, for garnish
  1. Combine fruit, sugar, water, lemon juice, spices, and salt. Bring to a boil. Reduce heat, and simmer gently for 20 minutes until fruits are tender.
  2. Discard cinnamon and cloves.
  3. Blend mixture roughly in a food processor so that there are plenty of chunky bits or leave whole.
  4. For a thicker consistency, mix cornstarch and water and stir into the fruit soup.
  5. Reheat and cook, stirring until slightly thickened.
  6. Chill thoroughly. Adjust taste with lemon juice or sugar.
  7. Serve in chilled compote glasses with dollops of sour cream topped with a cherry.
