Tocana de Praz | Leek Stew
Recipe type: Entree
Tocana de Praz | Leek Stew is a Romanian food recipe with beef and vegetables.
  • 1½ lbs. beef, cubed
  • 1 small bunch vegetable greens
  • 6 leeks
  • 2 carrots, slightly steamed
  • oil
  • 1 small onion
  • 2 tbs. butter
  • parsley and thyme
  • 1 tbs. flour
  • 1 tbs. sugar
  • juice of 1 lemon
  • 4 tbs. tomato sauce
  • salt and pepper
  1. Boil beef in a little water. Add a small bunch of mixed vegetable greens tied together, and remove it from the pot before the meat is tender.
  2. While the meat is cooking, cut 6 leeks into one-inch pieces, scald in salted water, drain and brown in oil.
  3. In a separate saucepan fry one small finely chopped onion in 2 tablespoons of butter together with a little parsley and thyme. Add about one tablespoon of flour, stir constantly until well browned.
  4. Add a little water, 1 tablespoon sugar, juice of 1 lemon, 4 tablespoons of tomato sauce and salt and pepper to taste.
  5. Cook slowly for 5 minutes. Add the leeks, carrots and the brown sauce to the meat and continue cooking until tender.
