Hideg Meggyleves

Hideg Meggyleves is a Hungarian food recipe of a chilled sour cherry soup.
Ingredients
  • 21⁄2 pints water
  • 6 oz sugar
  • pinch of salt
  • grated peel of ½ lemon
  • 1⁄4 tsp cinnamon
  • 1 lb sour cherries, pitted
  • 1 tbsp flour
  • 1⁄4 cup sour cream
Instructions
  1. Boil water, sugar, salt, lemon peel, and cinnamon for 5 minutes in a large pot.
  2. Add cherries to the boiling water and simmer 5 minutes.
  3. Blend flour and cream into a slurry with a ladle of the hot cherry soup. Add slurry to soup and boil until it thickens.
  4. Leave to cool, and serve chilled.
