Glamorgan Sausage
Recipe type: Entree
Glamorgan Sausage is a British food recipe of vegetarian sausage originally from Wales.
  • 1 cup bread crumbs
  • 1 small onion, minced
  • 1⁄2 cup yellow cheese, shredded
  • 1⁄4 tsp mustard powder
  • salt and black pepper to taste
  • 2 eggs
  • 2 egg yolks
  • 2 egg whites
  • 1 cup flour, seasoned with salt to taste
  • bread crumbs for coating
  • vegetable oil for frying
  1. Mix bread crumbs, onion, cheese, mustard, salt, and pepper. Beat together 2 eggs and 2 yolks and add to bread mixture.
  2. Beat one egg white to form stiff peaks and fold into bread mixture for a firm dough. Add more crumbs or a teaspoon of milk if necessary to get the right consistency.
  3. Shape dough into 12 sausage shapes and roll in flour. Coat in remaining beaten egg white and then roll in bread crumbs.
  4. Heat 1⁄4 inch oil in a frying pan and fry the sausages until golden.
