Gheymeh Bademjan
Recipe type: Entree
Gheymeh Bademjan is an iranian food recipe of Persian chicken.
  • 1 lb chicken breasts
  • 2 onions, chopped
  • ½ cup split peas
  • 6 oz can tomato puree
  • 2 ½ tsp dried lemon zest
  • 3½ zucchini
  • 1 eggplant, optional
  • salt
  • oil
  1. Saute one onion and boil chicken in water with other onion. Add sauteed onion and split peas. When peas and chicken are well cooked, add tomato puree, dried lemon peel, and simmer until well done.
  2. Saute zucchini and eggplant slices in oil with turmeric and sprinkle with salt.
  3. Put chicken and sauce in dish and place vegetable slices on top.
  4. Serve with rice.
