Recipe type: Entree
Fritanga is a Bolivian food recipe of spicy pork and egg stew.
  • 4 thick pork chops (with bone)
  • 11⁄2 cups water
  • 3 tbsp oil
  • 1 onion, thinly sliced
  • 1 can chopped tomatoes
  • 1 tbsp mint, minced
  • 1⁄2 cup parsley, minced
  • 1 tbsp crumbled oregano
  • 4 cloves garlic, minced
  • 11⁄2 tsp ground cumin
  • 1 tsp ground black pepper
  • 1⁄2 cup ground cayenne pepper
  • 1 tsp salt
  • 1 cup green onions, thinly sliced, for garnish
  • 2 eggs, beaten (for garnish)
  1. Parboil the chops in a pot with water for about 10 minutes. Drain, but reserve the broth.
  2. Heat oil in a frying pan and stir-fry all the other ingredients, adding them in the order as listed.
  3. Add the pork and the reserved broth, adding water to make 2 cups if needed.
  4. Bring to a boil, lower heat, and simmer for 15–20 minutes.
  5. Just before serving, quickly stir in the green onions and the eggs, and turn off the heat.
