Fried Buuz
Recipe type: Entree
Fried Buuz is a Mongolian food recipe of fried dumplings stuffed with meat.
  • 2 cups flour
  • 1⁄4 tsp salt
  • 1⁄2 cup water
  • 1 lb ground meat
  • 11⁄2 tsp salt
  • 1⁄2 onion, chopped
  • 1 clove garlic, crushed
  • 1 tbsp water
  • oil for frying
  1. Mix flour, salt and ½ cup water in a bowl and knead into a dough (add more water or flour as necessary to achieve a smooth consistency). Remove onto floured board and knead for 10 minutes until smooth and elastic. Divide into 16 pieces and roll each into a ball.
  2. Form each ball into a circle 4 inches wide, thicker in the middle than at the edges.
  3. In a food processor, mix the meat, salt, onion, garlic and 1 tbsp water into a firm paste
  4. Place 2 tablespoons of filling onto one half of each circle, leaving the margin clear of filling.
  5. Fold the other half over to form a crescent. Seal edges tightly with a fork or crimp into a braided edge. Repeat with the rest of filling and dough.
  6. Heat enough oil, about 4 inches deep, in a wok for deep-frying, making sure oil is well below rim.
  7. Fry 3 or 4 pies at a time, each side for 2 minutes, until they are golden and the meat is cooked.
