Eve’s Pudding
Recipe type: Dessert
Eve’s Pudding is a British food recipe with apples and cream.
  • 2 lbs apples, peeled, cored, and sliced
  • 1 tbsp lemon juice
  • 1 tbsp water
  • sugar to taste
  • 3 tbsp butter
  • sponge mixture:
  • 1⁄2 cup butter
  • 1⁄2 cup sugar
  • 1 tsp vanilla
  • 1 tsp grated lemon rind
  • 2 eggs, well beaten
  • 1⁄2 cup self-rising flour, sifted
  1. Toss apples in lemon juice, then simmer with water for 5–7 minutes until softened. Add sugar to taste and stir in butter. Pour into a lightly buttered baking dish.
  2. For sponge mixture cream butter and sugar until fluffy. Stir in vanilla and rind. Add eggs and flour a little at a time, alternating between the two and mixing in thoroughly each time. Fold in remaining flour; mix until smooth
  3. Pour sponge mixture over apples.
  4. Bake in preheated 350F oven for 35–40 minutes until golden brown.
