Recipe type: Soup
Erwtensoep is a Dutch food recipe of green pea soup with spare ribs.
  • 2 1⁄2 cups dried green split peas
  • 2 lbs pork spare ribs
  • 2 bay leaves
  • 1 tbsp salt
  • 1⁄2 tsp pepper
  • 1⁄2 tsp marjoram
  • 2 quarts water
  • 2 leeks, white part only, chopped
  • 2 celery stalks, chopped
  • 1 potato, peeled and cubed
  • 1 cup celery leaves, finely chopped
  • 1 tsp soy sauce
  • 1 lb smoked sausage, cubed
  1. Soak the dried peas overnight or at least 2 hours in cold water to cover, and drain.
  2. In a large pot, bring the peas, pork, bay leaves, salt, pepper, marjoram, and water to a boil. Reduce heat; cover and gently simmer for 11⁄2 to 2 hours.
  3. Add leeks, celery, and potato to the soup and simmer for another 45 minutes until tender.
  4. Remove bay leaves and ribs, and slice meat into pieces. Add meat and celery leaves to soup. Leave the soup thicker but if too thick add a little water.
  5. Simmer for another 20 minutes.
  6. Adjust seasoning and add soy sauce and sausage.
