Diós Kalács
Recipe type: Dessert
Diós Kalács is a Hungarian food recipe of rolled walnut bread.
  • 1 oz yeast
  • 1⁄2 cup sour cream
  • 1 lb flour
  • 1⁄2 lb butter
  • pinch of salt
  • 1 oz sugar
  • 3 egg yolks
  • 2⁄3 lb sugar
  • 1⁄2 cup water
  • 12 oz walnuts, ground
  • 12 oz almonds, ground
  • 3 apples, grated
  • 6 oz raisins
  • 1⁄2 tsp vanilla
  • grated peel from 1 lemon
  • 2 tbsp apricot jam
  1. Sprinkle yeast over the sour cream and place in a warm place until dissolved, about 10 minutes.
  2. In a food processor, mix yeast mixture, flour, butter, salt, sugar, and 3⁄4 of the egg yolks just until they form a dough.
  3. Remove from processor, knead on a lightly floured surface until smooth and elastic.
  4. Place in a greased bowl, cover, and leave in a warm place for about 45 minutes or until doubled.
  5. Divide dough into two. On a floured cheesecloth, roll out one dough ball to a 1⁄3-inch-thick rectangle.
  6. For the filling, bring sugar and water to a boil for 5 minutes to make a light syrup. Add walnuts and almonds. Remove from heat, and stir in the remaining ingredients.
  7. Spread half of the filling to within an inch of both edges.
  8. Roll up firmly like a jelly roll and place seam side down on a greased and floured baking sheet. Repeat with the remaining piece of dough.
  9. Brush rolls twice with remaining beaten egg yolk.
  10. Prick with a fork in a pattern of waves or flowers.
  11. Bake in the middle of the oven at 350F for 30 minutes, turn down heat to 325F and continue baking until rolls are golden brown, about 10 minutes.
