Dabo Kolo

Dabo Kolo is an Ethiopian food recipe of a spiced and crunchy chickpea mix.
Ingredients
  • 1 cup chickpea flour
  • 1 cup wheat flour
  • 2 tbsp spice mix
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 tbsp softened butter
  • 1⁄2 cup water
Instructions
  1. In a food processor bowl, combine and mix all the dry ingredients.
  2. Blend in the butter, then slowly add the water to form a firm dough.
  3. Remove the dough and knead it on a lightly floured surface for 10 minutes until smooth.
  4. Let the dough rest in a cool place, covered with a damp towel, for 10 minutes.
  5. Divide the dough into fist-size pieces and roll these into long sticks 1⁄2-inch thick.
  6. Cut sticks into 1⁄2-inch pieces.
  7. Slowly heat a heavy, ungreased skillet.
  8. Place enough of the uncooked dabo kolo in the skillet to loosely cover the bottom.
  9. Cook over medium heat, stirring occasionally, until lightly browned on all sides.
  10. Alternatively, arrange on a buttered and floured baking sheet. Bake in a 350F oven for about 20 minutes, or until golden.
  11. Allow to cool completely on the baking sheet.
  12. Store in air-tight containers and serve as a snack with coffee or juice.
