Cotlete cu Smantana | Cutlets in Cream
Recipe type: Entree
Cotlete cu Smantana | Cutlets in Cream is a Romanian food recipe with a white cream sauce.
  • 4 to 6 cutlets, slightly salted
  • 2 tbs. lard
  • salt
  • beef stock
  • 1 pt. cream
  • 3 or 4 egg yolks
  • parsley and chives
  • juice of 1 lemon
  1. Heat lard, and quickly fry cutlets on both sides. Now add beef stock slowly until the cutlets are covered. Cover the pot tightly and fry slowly until the cutlets are tender, adding from time to time a little more beef stock if needed.
  2. When the meat is tender, drain off the fat and pour over the cutlets, cream mixed with the yolks, finely chopped parsley and chives and the juice of one lemon.
  3. Heat very slowly, but be sure it does not boil.
  4. Arrange the cutlets on a heated serving plate and pour the cream sauce over.
