Chicken and Artichokes
Recipe type: Entree
Chicken and Artichokes is an Israeli food recipe cook with garlic and saffron.
Ingredients
- 1⁄2 cup lemon juice
- 1⁄4 cup olive oil
- 10 cloves garlic, peeled and halved
- 1 chicken, cut into serving pieces
- 1⁄2 lb artichokes, peeled and sliced
- 10 saffron threads, soaked in tbsp white wine for 5 minutes
- water, as needed
- salt and pepper to taste
- handful of fresh basil leaves
- 2 oz pine nuts, toasted lightly
Instructions
- In a large heavy saucepan, mix lemon juice and olive oil. Add the garlic halves, chicken, artichokes, and saffron.
- Add water just to the tops of the chicken, cover, and bring to a boil over moderate heat.
- Add seasoning and gently simmer for about 1 hour, or until chicken is tender.
- Add basil, check seasoning, and remove from heat.
- Garnish with pine nuts and serve with cooked rice.
