Chicken and Artichokes
Recipe type: Entree
 
Chicken and Artichokes is an Israeli food recipe cook with garlic and saffron.
Ingredients
  • 1⁄2 cup lemon juice
  • 1⁄4 cup olive oil
  • 10 cloves garlic, peeled and halved
  • 1 chicken, cut into serving pieces
  • 1⁄2 lb artichokes, peeled and sliced
  • 10 saffron threads, soaked in tbsp white wine for 5 minutes
  • water, as needed
  • salt and pepper to taste
  • handful of fresh basil leaves
  • 2 oz pine nuts, toasted lightly
Instructions
  1. In a large heavy saucepan, mix lemon juice and olive oil. Add the garlic halves, chicken, artichokes, and saffron.
  2. Add water just to the tops of the chicken, cover, and bring to a boil over moderate heat.
  3. Add seasoning and gently simmer for about 1 hour, or until chicken is tender.
  4. Add basil, check seasoning, and remove from heat.
  5. Garnish with pine nuts and serve with cooked rice.
