Cherry Cake

Cherry Cake is one of the classic dessert American recipes.
Ingredients
  • • 1 ½ cups maraschino cherries
  • • ½ cup slivered almonds
  • • ½ cup minced candied citron
  • • 4 cups flour
  • • 2 tsp baking power
  • • 1 ½ cups butter
  • • 2 cups white sugar
  • • 4 eggs
  • • 1 cup milk
  • • 2 tsp vanilla
  • • 1 tsp almond extract
  • • 1 tsp lemon extract
Instructions
  1. Heat oven 325 F.
  2. In medium bowl, place maraschino cherries, almonds, and citron and stir in ¼ cup of flour. In a separate bowl, sift together remaining flour and baking powder.
  3. In large bowl, cream butter and sugar and beat in eggs.
  4. Continue beating until very light and fluffy.
  5. Combine milk, vanilla, almond and lemon extracts in small bowl.
  6. Beat flour mixture into butter mixture and the milk mixture.
  7. Fold maraschino cherry mixture into the batter and pour into two buttered bunt pans.
  8. Bake 1 ½ hours until a toothpick comes out dry and crumb-free. Invert on a cooling rack.
  9. Cool, wrap well in plastic and freeze.
  10. Defrost one day before use.
