Changua con Huevo
Recipe type: Soup
Changua con Huevo is a Colombian food recipe of poached egg soup.
  • 3 cups chicken or beef broth
  • 3 cups milk
  • salt, pepper to taste
  • 4 eggs
  • 1⁄2 cup spring onions, chopped
  • 1⁄2 cup cilantro, chopped
  1. In a saucepan, bring broth, milk, salt, and pepper to a boil.
  2. Break the eggs one at a time into a small bowl and then slide each egg into the boiling water, being careful not to break the yolk.
  3. Cover pan and let boil for one minute. Turn off heat.
  4. To serve, distribute spring onions and cilantro equally among the bowls and gently place egg over.
  5. Ladle broth over egg.
  6. Serve as an appetizer with crusty bread and butter or a maize roll.
