Bolas de Bacalhau

Bolas de Bacalhau is a Portuguese food recipe for codfish balls.
Ingredients
  • 1⁄2 lb dried salted cod-bacalhau
  • 2 cups water
  • 1 small onion, minced fine
  • 1 bay leaf
  • 3 cups potatoes, boiled, peeled and mashed
  • salt and black pepper to taste
  • 1 tbsp parsley
  • 2 eggs, beaten with a pinch of salt
  • 1 cup cornmeal
  • vegetable oil for frying
Instructions
  1. Wash cod and soak in cold water overnight, changing the water at least twice.
  2. Drain and discard water. The cod should feel soft. Discard any bones and skin.
  3. In a saucepan, bring water, onion, and bay leaf to a simmer. After 5 minutes, add the fish. Ensure the water covers the fish. As soon as it has simmered, cover and remove from heat.
  4. Let cool briefly.
  5. Drain the fish and pound in a mortar to separate the flesh into fine shreds.
  6. Add mashed potatoes, seasoning, parsley, and half the eggs. Add some cornmeal if the mixture is too moist.
  7. Shape cod mixture into round balls about 1-inch thick.
  8. Heat oil to moderate heat for deep frying in a frying pan. Fry a few at a time until golden brown. Drain on paper towels.
