Berry Cream
Recipe type: Dessert
Berry Cream is a British food recipe based on the Scottish Cranachan.
  • 6 tbsp oatmeal
  • 21⁄2 cups double cream
  • 3 cups fresh raspberries
  • 6 tbsp honey
  • 3 tbsp vanilla
  • 4 dessert bowls
  1. In a heavy skillet, dry-toast oatmeal until golden brown; remove from heat and leave in skillet to cool.
  2. Whip cream to soft peaks. Add honey and vanilla, and mix well.
  3. Set aside for each glass 6 raspberries for decor. Fold remaining berries into cream, crushing a few to release color.
  4. Place 3 berries at the bottom of each glass.
  5. Add cream/berry mixture. Smooth top and spread with 11⁄2 tablespoons oatmeal.
  6. Garnish with fruit. Chill, covered with plastic wrap, for 3 hours or overnight.
