Recipe type: Condiment
Berbere is an Ethiopian food recipe of spice mix that can be served with many foods.
  • 1⁄2 tsp fenugreek powder
  • 1 tbsp cayenne pepper
  • 1 tbsp red chili pepper powder
  • 1⁄8 tsp allspice
  • 1⁄4 tsp black pepper, crushed
  • 1⁄2 tsp cardamom
  • pinch of cinnamon
  • pinch of cloves
  • 1⁄4 tsp coriander
  • 1⁄4 tsp cumin
  • 1⁄8 tsp turmeric
  • 1⁄2 tbsp salt
  • 1⁄2 tsp ginger, peeled and grated
  • 1 tbsp shallots, finely minced
  • 1⁄2 tsp garlic, minced
  • 11⁄2 tbsp vegetable oil
  1. Toast the dried spices for a few minutes in a heavy skillet over low heat. Stir continuously to avoid scorching. Remove from heat and allow to cool.
  2. Combine dried spices with the salt, fresh ginger, shallots, garlic, and oil. Process in a food processor.
  3. Use immediately or store for several days in a tightly sealed container in the refrigerator. Serve over meat or vegetables.
