Beef Stew
Recipe type: Entree
Beef Stew is a Peruvian food recipe called Guiso de Vacuno.
  • 3 tbsp. vegetable oil
  • 2 medium onions, chopped
  • 1½ lb. round steak, cubed
  • 2 tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • ¼ tsp. red pepper flakes
  • 1 tsp. salt
  • ¼ c. white wine vinegar
  • 2 c. beef bouillon
  • 2 c. squash, peeled and cut into ½ inch pieces
  • 1 c. frozen peas
  • 1 c. frozen corn
  • 3 sprigs parsley
  1. Heat oil in a pan and sauté onions.
  2. Add meat and brown well, about 20 minutes.
  3. Add all spices, salt, vinegar, and beef bouillon. Bring to a boil, stirring to mix well.
  4. Reduce heat, cover, and simmer for 20 minutes.
  5. Add squash, cover, and simmer for another 20 minutes.
  6. Add peas and corn and heat thoroughly.
  7. Garnish with parsley and serve.
