Apple and Parsnip Soup

Apple and Parsnip Soup is a British food recipe of a nice smooth soup originally from Ireland.
  • 2 tbsp butter
  • 1 onion, chopped
  • 1 lb parsnips, peeled and diced
  • 2 stalks celery, rinsed and diced
  • 2 apples, peeled, cored and diced
  • 5 cups chicken stock
  • 1⁄4 tsp curry powder
  • 1⁄4 tsp ground mace
  • salt, pepper to taste
  • 1⁄2 cup sour cream or yogurt
  • 4 tbsp parsley, chopped
  1. Melt butter in a saucepan over low heat. Stir in onion and saute gently until soft.
  2. Add parsnips, celery, and apples and saute gently for 2–3 minutes.
  3. Stir in chicken stock; cover and simmer gently for 15–20 minutes, or until vegetables are tender.
  4. Stir in spices, salt, pepper, and sour cream.
  5. Continue to simmer only until cream is heated through; do not let it boil, or it will curdle.
  6. Garnish with parsley.
