Recipe type: Entree
Aleecha is an Ethiopian food recipe of vegetable stew.
  • 1 cabbage, cut into eighths
  • 1⁄2 cup herb butter
  • 2 onions, sliced
  • 1 tbsp spice mix
  • 1⁄4 cup water
  • 4 carrots, peeled and cut in half
  • 11⁄2 lbs potatoes, peeled and cubed
  • 1 cup cauliflower, broken into florets
  • salt to taste
  1. Boil the cabbage until soft. Drain.
  2. Heat butter in saucepan and fry onions until softened.
  3. Stir in spice mix and cook for 1 minute
  4. Add 1⁄4 cup of water, and bring to a boil.
  5. Add carrots and potatoes, reduce heat, cover, and simmer for 15 minutes.
  6. Add cauliflower and cabbage, and simmer for 15 minutes.
  7. Taste and correct seasoning.
