Abgusht
Recipe type: Entree
 
Abgusht is an Iranian food recipe of beef stew with potatoes.
Ingredients
  • 1 lb stew meat, beef or lamb
  • 1 onion, chopped
  • salt and pepper, to taste
  • ½ tsp turmeric
  • ½ tsp saffron
  • 4 potatoes, chopped
  • 2 carrots, chopped
  • ½ cup chickpeas
  • 2 tomatoes
  • 1 eggplant, chopped
  • 1 liter water and as needed
Instructions
  1. Put everything in a large pot and simmer for 1-1/2 to 2 hours on a low setting. Add salt and pepper to taste.
  2. Make sure there is plenty of water. When done, the water will have the consistency of a thick soup and the other ingredients will be well cooked.
